Loosely, this translates to "Soft Sandwich Bread." Pain is French for Bread and Mie is reference a soft interior. This a sourdough version of the classic pan loaf enriched with butter, milk, and honey for a soft crumb. There is just a touch of spelt to enchnace the buttery richness of the bread. Use this as you would any other sandwich bread. PS, it makes really good French Toast.
